Buffalo Chicken Quinoa Bites

I have an amazing party-food recipe to share with you today.  Other than that my brain is all over the place today.  My ideas of "what to blog about" are rattling around like a pinball machine.  Maybe there's so much going on...maybe I'm just having a blond week!
It is Wednesday, so let's start with the food stalker's dream - What I Ate Wednesday.
We have had some very flavorful dinners around here.  We had comfort food Sunday with baked "Thanksgiving" chicken, mashed potatoes made with almond milk, and garlic mashed cauliflower.
Monday was "salad" Monday and it featured a spinach and chicken salad with tomatoes, bell pepper, green onions, goat cheese, and a simple homemade balsamic vinaigrette.
Tuesday night's dinner was a showstopper - Buffalo Chicken Quinoa bites.  It combined two of my favorite foods, quinoa and crock pot buffalo chicken.  But I can't take the credit for it. The recipe came from So Very Blessed. I made few modifications.
This dish would be GREAT for fall parties, tailgating, or a pre-Thanksgiving appetizer.  Despite the extra buffalo sauce I added it still wasn't too hot.  I'd also maybe add celery or carrot to the mix and a healthy blue cheese dipping sauce. Great work Becky!
Here's the recipe I used (which is right on Becky's site):
Quinoa Buffalo Chicken Bites
  • 1 cup cooked quinoa
  • 1 large egg
  • 1/4 cup chopped onion
  • 1 cup finely chopped cooked chicken
  • 1/2 cup Frank-s buffalo sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup bread crumbs
  • 1/2 tsp minced garlic
1.  Cook chicken.  I used the crock pot then shred method.  
2. Preheat oven to 350 degrees.
3.  Mix together all ingredients.
3.  Press mixture into a greased mini muffin tin.
4.  Bake for 23 minutes.
