WIAW - 4th of July

Happy 4th of July friends!

I hope you're having a wonderful, patriotic Independence day!

My day started bright and early at the Watermelon 5k with Track Shack. You can read about last year's Watermelon run here.
wow.
Since so much is going on around here with work, school, and Australia, the 4th is an extended work day with a long "to-do" list.  I'd love to see "fun in the sun" pop onto the list, but I highly doubt it. Wear sunscreen for me.

I do have a killer workout and a BBQ at the Bealerts to look forward to.
Maybe some sandbag action will occur.

Since it is Wednesday (what a weird day for a holiday) here's a little WIAW love.



The Bealert cookout - I'm bringing 2 salads to the party and one "new to us" fruit.
Ready for the 4th.
The first one is a simple summer tomato basil salad with basil from my garden. I love the fresh flavor of this salad. I don't add any oil, which makes it very low in calories.  Just tomato, basil, mozzarella, balsamic vinegar, salt, and pepper. Couldn't be easier.

The second salad I'm attempting has me a bit worried. It's a watermelon and feta salad.  I've eyed this combo from Julie's blog and it seems fairly simple to make. Does anyone out there have any tips?

I've also never cut a watermelon all by myself so I'm nervous, but I did get this neat handout from the FDA symposium Monday.  Perfect timing.
I'm also bringing jicima with lime. Just a fresh treat to nibble on.
