Carrot Cake Baked Oatmeal

Today I had planned to talk about how Kyle & I are incorporating more vegetarian meals into our weeks.....BUT....I made such an amazing batch of baked oatmeal yesterday that I had to share the recipe right away!

Do you like filling your belly with cholesterol lowering soluble fibers?


Yes! Yes! Yes!


Then let's whip up some carrot cake baked oatmeal!!!!
This recipe is similar to my apple cinnamon baked oatmeal that I LOVE.  I was thinking about other combinations when I saw baby food carrots in my pantry. I usually use them for my carrot cake protein bars, but remembering coconut is prominent in my oatmeal an idea formed.

Carrot Cake Baked Oatmeal

Ingredients:
  • 3 cups old-fashioned oats
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon+ cinnamon (add more to your taste) 
  • 2 teaspoons pumpkin pie spice
  • 2 cups plain almond milk (can use other type of milk)
  • 3 tablespoons egg white substitute
  • 1/3 cup unsweetened applesauce
  • 1 4oz container cottage cheese (can sub Greek yogurt)
  • 2 small jars of carrot baby food
  • 1/2 cup raisins/craisins
  • 1 cup coconut flakes
  • 1/3 slivered almonds
Directions:
  • Preheat oven to 400 degrees.
  • In a bowl mix dry ingredients; oats, baking powder, salt, cinnamon, pumpkin pie spice.
  • In another bowl mix wet ingredients; milk, egg white, cottage cheese, carrots, applesauce. Combine the wet and dry ingredients.
  • Add coconut, raisins, and almonds.
  • Pour into a greased 9x13 casserole dish and bake uncovered for 20 minutes.
  • Remove from oven and stir. Bake uncovered an additional 20 minutes.
In other news today, things are pretty typical around the Fit2Flex home.  I headed to 5 hours of Food Science class. Working with tofu (not a fan). Some physical therapy and then a rainy afternoon on the couch.  


Once I noticed the weather was cool I hit the streets for a 3 mile run (28:20) and returned home to a very exciting piece of mail~
