It's Wednesday. I think you know
the drill:
This week instead of an entire day of eats I wanted to share a healthy, colorful dinner enjoyed by us this week.
As part of the new calorie calculations I did for us, we are trying to eat more carbs. Yes, more carbs. After doing our numbers and looking at our diets I saw that we were below the carb numbers recommended us and WAY above in the protein numbers. I'm a little scared to add more carbs into my daily meals, however my calorie range is still within 1800, so we shall see. I do feel more full after dinner, but the sweet tooth is still raging after last weekend's resort treats.
Our dinner was clean, colorful, and rang in at 361 calories.
Our entree was lean, lemon baked chicken. The recipe is adapted from The Biggest Loser cookbook. I always come back to this recipe when we are on a clean eating kick.
Basically, you coat chicken breast in lemon pepper seasoning. You then sear it in a skillet to get a nice brown color. You then top it with lemon slices and bake at 400 until cooked through. Simply flavorful.
While the chicken was cooking I diced up some zucchini, yellow squash, and tomato and sauteed them in EVOO. I used 1 tablespoon for the entire pan which was 4 servings. I did this to add filling fat to our meal.Our carb for dinner was brown rice. Nothing exciting, but necessary. I had 1/4 cup and Kyle had 1/2 cup.
The BEST part of dinner, IMHO, was the mashed cauliflower!!! Excuse me, mashed garlic cauliflower. I have a full post on this extremely recipe tomorrow.
As you can see the meal was filling, flavorful, AND well-rounded in calorie numbers.
After dinner Kyle and I still had room left in our daily calorie budgets so we had fresh strawberries with some whipped cream. We enjoyed this while watching the premier of "The Real Housewives of New Jersey".
Are you guys addicted like we are? I am so envious of their enormous houses!!! I am very interested to see how all the Teresa/Jacqueline drama works out. After watching "nice" Teresa on The Celebrity Apprentice this is quite a change. Will the real Teresa Guidice please stand up?
