
We've talked calories and nutrients for the last few weeks, so I wanted to talk about the joy of my favorite food...a special food I call...tomato food.
Yes, I said, "tomato food".
The other day I was thinking about my favorite "type" of food. I immediately thought about all the foods I crave and make on a weekly rotation - Mediterranean and Italian foods with an occasional pizza craving thrown in. I love tomato foods! Nothing makes me happier than a delicious, vine ripe tomato with fresh herbs and a little vinegar.
Sunday we found a BOGO deal on Campari tomatoes at Publix and I have been enjoy the sweet, red simplicity all week.
Sunday night we grilled chicken and steak (for Kyle) and served it with a stellar tomato and red onion salad.
Simple Tomato Salad:
- Diced ripe tomatoes
- Sliced red onion
- Basil
- Parsley
- Fresh garlic
- Red wine vinegar
- Tiny bit of EVOO
- Salt
- Pepper
Kyle was extra lucky and got to enjoy the leftover salad with his lunch the next day. Lucky dog!
Our meal on Sunday also included a recipe that Jen featured for Fun & Feisty Zucchini Cups.
I substituted goat cheese for the feta and was thrilled with the result. I am currently planning another Greek dinner party with these on the menu.
Tuesday's lunch benefited from the lycopene goodness of tomatoes. I added leftover grilled chicken to quinoa, tomatoes, cucumbers, basil, and 1 laughing cow cheese. I simply topped it with balsamic vinegar and dug in.

Since I'm gushing love for all things tomato today here are some other delicious tomato eats. Side note: I actually hate the "gooey" inside part of a raw tomato. I take great pains to remove it from all salads. OCD, much? I also love grape tomatoes as the seeds are much less repulsive to me.

I've really been digging kale lately. I've been eating it for breakfast (underneath runny eggs), for lunch (mixed for a salad with other veggies and black beans), and for dinner (alongside whatever the "main" course is).

ReplyDeleteOh, you made the zucchini cups! I saw those and thought that I have to make them asap - hopefully this weekend :) I have both feta & goat cheese, so I'll hafta try both!
ReplyDeleteI have been enjoying Tomatoes lately and I also remove the insides! yuck! haha. The zucchini cups look awesome! I love zucchini! will haev to try!

ReplyDeleteMy favourite way to eat it is roasted, with a bit of olive oil, sun dried tomatoes and some feta, at the last minute. Even tastes great cold, the next day, as part of a protein filled salad!
