Study, study
Tomorrow I have a midterm in my "Nutrition Concepts and Controversies" class, so I've spent a good portion hours of today studying. I really don't mind reading the material...it's the stressing about what exact questions will be asked that I don't like. That being said, the studying must be done and I'm hoping I do well on the exam.

Since a part of my exam is on vitamin, minerals, and related controversies I have been thinking a lot about my own diet. I started using the SparkPeople website to track my vitamins, specifically calcium and iron. I'm also planning to start a very clean 2 weeks of eating next Monday. I'm not in "the best shape ever" right now and we have a resort/pool staycation coming up in two weeks and I want to be able to enjoy all the treats there.
Lunch was something new for me - a salmon burger! I hate lunches usually. I typically have leftovers, but some nights there is only enough for Kyle and he gets first dibs since he's without a kitchen at the gym...duh!
I cooked up the salmon burger in the skillet and topped it with Grey Poupon (fancy, huh) and banana peppers. It was pretty good! I had a sweet potato and snap peas on the side.
I was having a very clean day of eating overall until Kyle called and told me his client made us cupcakes! CUPCAKES! Carrot cake with caramel and double chocolate!! I have will power....but homemade cupcakes from this lady are divine! Carpe Diem Cupcake! (apparently that's a blog name? Who knew?)
I took a break from studying to head over to a Bikram Yoga class. I did more research to confirm that you do in fact burn over 600 calories in a Bikram class, but I just don't see the difference like I do when I run. What about you?
Dinner is also super easy tonight. Dinner was "ready" at 8am when I dished everything into the crockpot. I'm making another trial of our Easter brunch egg casserole and I hope this one has more flavor than the last hashbrown version did. If you have a successful egg, crockpot, breakfast recipe please share!
