Springtime Raspberry Chicken Salad

Today I had a kick butt post all written up in my head.  It was about how Kyle & I are attacking clean eating for the next 12 days.

Well, that post is still..up in my head.
I had to finish a research project on the bioavailability of different protein powders as well as prep my presentation for tomorrow. My brain was pretty much done after that.


If you were wondering about the best protein powder it's whey isolate.  Fact.


Kyle & I have taken on a clean eating overhaul this week and today's lunch salad gave me lots of clean eats with plenty of flavor.
Kyle's mom gave us the idea to marinate chicken in Newman's Own Raspberry Vinaigrette dressing.  We grilled it last night for dinner and the leftovers made my salad today.

Springtime Raspberry Chicken Salad
In the mix:
  • Grilled raspberry chicken
  • Arugula
  • 1/2 cup quinoa
  • 1 diced scallion (green onion)
  • Blackberries (you could use any berry)
  • Goat cheese
  • Raspberry walnut vinaigrette
The salad was a great blend of protein, carbs, and fats to keep me full.  It felt like it was bursting with springtime flavors. I have been craving goat cheese for a while and it was only $2.99 in the store today.

  3. Being sick I have no real plans other than to stick to bland stuff. I bought quinoa awhile back and really need to try it out. Maybe mixing it in a salad will be my first dish. Thanks for the idea!

    1. Quinoa would be perfect for you! It's a complete protein source. I make it in a rice cooker and it's so easy!

  4. No sweets (aka candy and baked goods- fruit is ok) and stop going back for seconds. I'm giving it two weeks and hopefully this becomes a habit! Dang chocolate gets me every time!

  6. Oooh I love the idea of adding berries to a quinoa salad! With the addition of goat cheese too, it must taste awesome. I didn't really splurge at all on easter. So I'll just be eating the same :)

  7. That salad looks delicious, and pretty similar to my lunch today too! I was so full after eating it, and I was pleased that I'm still not hungry. Quinoa is one of my favorite foods now.

    Love quinoa! had it monday night. tonight was a wheat berry salad. was just as good.
