Protein Pumpkin Pancake Sunday

I had a great trip to Atlanta for the Dirty Girl Mud Run. AMAZING! I will have a full recap post up in a few days and I can't wait to tell you all about it.

This Sunday morning I slept in....I mean slept in. After 2 overnight commercials shoots and a late drive to Atlanta I was exhausted.  I'm always kind of bummed when I sleep a good part of the day away, but my body really needed it.

Once awake and rejoining society, Kyle and I decided on a pancake breakfast.  Saturday night on the drive back from Atlanta, the girls were chatting about great recipes.  Alexis mentioned her pumpkin protein pancakes and I jumped at the chance to create them this morning.
They were very easy to make.  Just place all the ingredients in a blender and cook like pancakes.  We topped them with strawberries and sugar-free syrup.

Pumpkin Protein Pancakes:
Ingredients:
  • 1 egg
  • 4 egg whites
  • 1/2 cup (4 oz) cottage cheese
  • 1/2 cup oatmeal
  • 1 scoop vanilla protein powder
  • 1/2 cup pumpkin
  • 1 tablespoon chia seeds
  • 1 tablespoon cinnamon
  • 1 handful spinach (optional)
  • 1 packet Splenda (optional)
I'm posting this on Monday as I'm back to a very tough school schedule for the month.  It's time to focus and set my sights on the goals I've desired to achieve.  Carpe Diem!
