This week's blog includes a recipe for some pretty darn tasty chicken meatballs that I created last night. If you saw my leg workout last week than you know I was having some more problems with the herniated discs in my neck.

Yesterday they were particularly painful so after a visit to the chiropractor, I spent the afternoon sleeping on the couch. In a pillow cocoon safe for sore necks! I woke up at 650 and I needed dinner made by 745. In a still foggy daze I whipped together some amazing meatballs! They were truly amaze-balls a la Guiliana Rancic.
Here's a food rundown for the day:Breakfast2 pieces of Udi's Gluten Free Millet & Chia bread with natural PB, coffee

It's less food than I usually eat in a day...but I was asleep in a medicine induced coma from 3-650.
Now onto the meatballs - I didn't measure anything but threw every "Greek" thing I could think of in a bowl. Great success. Try them. You'll love them. Scouts honor.
Greek Chicken Meatballs- 1lb 95/5 ground chicken (or turkey)
- 3/4 cup Italian breadcrumbs
- 1/2 cup organic fat free milk
- 2T egg whites
- 1/2 cup diced sun-dried tomatoes packed in oil
- lots of feta cheese
- 1/4 cup fresh parsley
- 2T oregano
- 1t Italian seasoning
- 2T garlic powder
- salt
- fresh ground pepper
Mix breadcrumbs and milk. Let soak 1 minute. Add feta, egg white, sun-dried tomatoes, and seasonings. Mix well. Add thawed ground chicken and mix well.
Form meat mixture into uniform balls and place on a Pam-sprayed baking pan.
Bake in a oven pre-heated to 350 for 20-23 minutes or until a meat thermometer inserted into the largest meatball reaches 160 degrees.
Serve with a simple basil tomato sauce if desired.

ReplyDeletethe better question might be "what carb am I not addicted to" hahah I just seem to be drawn to them... although I usually eat whole wheat so that's better right?
