What I Ate Wednesday v11.0- Oats in a Jar!
Today is a milestone! Yup - 11 weeks of WIAW love, but it's my first time making Oats in a Jar! Can you believe it? I never remember to save my PB jars, but I finally did and it was worth it!
Here's the deal with overnight oats in a jar. They are big on the blog-o-sphere and that's where I saw them first. Take a look at Meghann's recipe. You take a PB jar when it's empty and fill it with oats for the next day. You get all the leftover PB bits with healthy oats to start your day.
My combo was: 1 pb jar, 1/2 cup oatmeal, 3/4 cup soymilk, Mila (an amazing raw Chia product), Splenda, and cinnamon. I put it in the fridge overnight and enjoying it for my am snack. Now hurry and eat your PB so you can try one too!
Now onto the WIAW food journal parr-tay! Here's a look at past WIAW:version one, two, three, four, five, six, seven, eight, nine, ten.
Breakfast 8am - Pina Colada Smoothie. Really great, you should try it! 1T coconut oil, 1 cup frozen mango, 1c almond milk, 1/2c oatmeal, 1 scoop protein powder, 1t coconut extract. I shall be replicating this tomorrow!
10am - Low Sodium v811am - Overnight Oats in a Jar! Yummers!
Lunch 2pm - Ham and cheese sandwich on Udi's Gluten Free bread, curried lentil soup

*insert nap- I'm trying to fight off the "icky" I've been feeling*5pm - OJ with airborne, rice cake, laughing cow
Dinner 730pm- Sauteed chicken and zucchini with homemade pesto, baked cabbage. Kyle had a side salad and 2 from-scratch biscuits I made in class.
930pm- Blogging snack - Food Should Taste Good Olive chips
I skipped a run I wanted to do today, because I've been feeling sick. I did a "2 a day" yesterday and I don't know if it was a great idea. Hitting the weights at 6am tomorrow.
What'd you eat?
Love and OIAJ,Carissa & Kyle
