Fear the Fish

It's the weekend!  Do a happy dance!  This weekend will def be less intense than last weekend, however I'm looking forward to some one-on-one time with Kyle.  I'll share the fun soon!

What makes a great weekend better?  Free stuff!  Don't forget to enter my Food Should Taste Good giveaway.

I also wanted to wish a one day belated blog birthday shout out to our 1st member of the Healthy Hall of Fame- Chris!  Happy birthday Easy E! And while I'm at it, Happy Birthday to a fitness champ, Amber!

Now onto the fish.  Kyle and I both know that we need to eat more fish, but, boy, is it an uphill battle.  I like fish.  Kyle tolerates it loathes it wish a passion.  Fish provides essential fatty acids that our bodies can't make and we need to eat.  The fish must be eaten.

Yesterday it was.  Salmon in fact.  I marinated it in teriakyi sauce.  Inspired by Chris's recipe. Then I broiled it in the oven for 10 minutes.  I like my fish very well done.

We had the fish with roasted asparagus, a simple summer salad, and risotto.  I recieved the risotto as part of the FoodBuzz tastemaker program and it's one of Birds Eye new Steamfresh Chef's Favorites.  It was a vegetable primavera risotto and I also recieved creamed spinach, mushroom risotto, and red potatoes and green beans in a parmesean oil.
These are new selections from the SteamFresh family that won't be available in stores until September.  They are microwaveable and an easy side dish.  I liked that for the most part the ingredients were all whole foods and not a laundry list of chemicals.  The rissotto was nice and had good flavor.  The carrots and peas were crisp too which I liked.
The fish was "okay".  It didn't change my world..other than giving me some much needed amino acids.
Asia liked the fish.
Kyle and I finished the night by enjoying our first breath of football!  Thank goodness!
Are you ready for some football?

We are!

Love and gills,
Carissa & Kyle
