This morning I had plans of a 745am workout....had plans.
I trained yesterday morning and throughout the night I noticed my increasing level of discomfort. Like lifting my arm to pet my cat was hard. I usually don't train back-to-back days, but the 4th threw my schedule out of whack. However my body was quick to let me know that REST DAYS ARE IMPORTANT!
Do I feel guilty for missing the gym today?No way! Rest is when my muscles are repairing, rebuilding, and actually getting stronger. Rest allows my body to adapt to the demands of my training. That way the next time I hit the gym I will actually be stronger. Constantly breaking down muscle without adequate rest time won't lead to bigger muscles....scouts honor!
Now onto my recipe. Like I said last night I saw this recipe on Cara's blog at Chic Meets Healthy. Mine is just an adaptation of hers. Since I don't want to take credit for something that's not just my creation please visit her blog too!
Tomato and Feta Stuffed Chicken
- Butterfly chicken to create a space for stuffing
- Marinate 2-3 hours in EVOO, lemon juice, fresh parsley, basil, and salt & pepper
- Stuff chicken with a mixture of diced tomatoes, fresh basil, feta, and black olives if you like.
- Secure with a toothpick.
- Sprinkle chicken with additional spices and add a few squirts of I Can't Believe Its Not Butter
- Bake at 350 for 35 minutes or until cooked
To go alongside my chicken I sauteed some spinach and grape tomatoes in cooking spray. I wanted more "volume" with my meal. The spinach also gave me something to eat alongside the "un-stuffed" ends of the chicken that can get a little boring tasting.
I also enjoyed some raw bell pepper with some hummus. Great hummus sale at Publix last week (BOGO + 2 $1 off coupons)
