How to prevent bad fish? Buy quality fish. Have a Grill King cook it to perfection. And if all else fails - top it with a lot of stuff!
This recipe came from the cover of Cooking Light Magazine. I am a subscriber. Holla. It was very easy to make and the ingredients were not too expensive. When I make it again I plan to cut my ingredients smaller and add more herbs!!!
Salmon with Tomato-Peach Salsa
Ingredients:
- 1 chopped peach
- 3/4 cup quartered tomatoes (I used grape)
- 1/4 cup sliced red onion
- 3 T fresh mint
- 3T fresh basil
- 2T fresh lemon juice
- 1T EVOO
- 1T honey
- 1 jalapeno pepper (I used a Mexibell from my garden)
- 1t salt
- salmon

Method:
- Preheat the grill to high
- Combine all ingredients except salmon in a bowl. Use only 1/4t salt
- Sprinkle the salmon with the remaining salt and black pepper
- Place on a grill rack coated with cooking spray
- Cook 10 minutes or until desired doneness, turning once
- Serve with salsa

yum! i just made a salsa SO similar to this except it had avocado in it.
ReplyDeleteWe made this for dinner tonight it was delicious! We didn't have red onions so used white and didn't have jalapenos so used a random red pepper.

I like how these fruit salsas are so versatile! I have a recipe for an all sweet fruit salsa that I want to try with cinnamon pita chips...I'm just afraid I won't be able to stop eating pita chips!
