Saved by Chipotle (sauce)

I love to cook!  I love it.  But tonight I was tired and I didn't really feel like cooking. Well not so much the cooking...but I didn't feel like cleaning?  Do you ever feel that way?


I had planned to sear some chicken and then mix it with black beans and spicy Rotel tomatoes. But the thought of dicing the chicken and searing and cleaning...welp.  I didn't wanna!  So I did something a little cooky!  I threw the chicken and the beans and the tomatoes in the crock pot. I put it on high and I crossed my fingers!


<fast forward 2.5 hours later>


Kyle came home and my fingers were still crossed.  The chicken was cooked but not nearly tender and shreddable like I wanted.  I hung my head in culinary shame.


Then super Kyle came to the rescue with a BRILLIANT idea!  Even though the chicken was bland, we should add some chipotle sauce.  We topped 40cal corn tortillas with the chicken/bean/rice mixture and dropped some spicy Chipotle action on the top.
You saved the day Maurice.
It took our dish from dull...to aaarrrrriiiibbbbbaaa! 


Thanks Kyle for being the dinner hero tonight!  It was actually a pretty good meal.  We rounded the meal out with a spinach, sweet pepper, and blueberry salad with raspberry dressing.

Late night was enjoyed on the couch with the Vegas round of SYTYCD.  Is it just me or are you LOVING the talent this year?  I just wish they'd show more complete dances.  Can't wait to see who is on the "hot tamale" train next week?
