Pumpkin breakfast smoothie and cheating

I had a lot of leftover pumpkin to use from my overnight oats experiment, however first I wanted to share something bad I did with you.

1.  I ate cake.
2.  After 9pm.
3. In bed.
Here's the proof!  Kyle returned from his annual Father's Day dinner with Orange Cake in hand. My cheat day was only hours away from ending, and even though I was already in bed with my teeth brushed I just couldn't turn down the sweet stuff.  It was good great!  Thanks babe!

Now onto the pumpkin smoothie.  The recipe is pretty basic and I have to say I was very surprised with how much I loved it!  It was kinda like pumpkin pie in a glass...with a straw.  I was skeptical of adding the banana at first, but I think it added a much needed sweetness.  I think I shall have one tomorrow morning as well!

Pumpkin is high in Vitamin A as well as Alpha-carotene.  Alpha- carotene is thought to slow the aging process and also reduce the risk of developing cataracts and prevent tumor growth.

Pumpkin Pie Breakfast Smoothie

  • 1/2 cup pure pumpkin
  • 1/2 frozen ripe banana
  • 1/2-1 cup milk (I use unsweetened almond)
  • 1 scoop Dynamatize vanilla protein powder
  • 1/4 cup oatmeal
  • 2T flaxseed
  • 1 handful spinach
  • Cinnamon
  • Pumpkin pie spice
  • 1 handful ice cubes
Don't fear the green.  It's from the spinach.
Blend and enjoy!  All the way to school I daydreamed about fall and my birthday!  And then I got out of my car and it was 95 degrees!  Only 138 days to my birthday!

Love and the great pumpkin,

Carissa & Kyle
