Lemon Caper Chicken


Kyle has been kicking butt on our eat clean diet.  He had CANNED chicken today!  Ugh!  So I wanted to give him something tasty tonight, yet still clean for dinner tonight.  That worked out to one of his favorites, lemon caper chicken. I paired it with some roasted veggies and a salad to make sure that boy had all his green stuff today.  How is your veggie count?


This is a very easy dish that works its way onto our plate quite often.


Lemon Caper Chicken

  • Chunk chicken
  • Sauté in EVOO
  • Once cooked make a quick pan sauce by adding lemon juice and capers to the pan.  For extra richness add 1T of butter. (not added tonight)
Oven Roasted Veggies
  • Cut veggies and coat in EVOO
  • Tonight I added Montreal steak seasoning
  • Roast at 400 for 30 minutes
Lunch all packed up tomorrow.
I also got some fun in the mail today!  But.....I can't say what it is.  I can only say that it's never too early to get ready for Christmas!  Ho,ho, ho!
