Combine all those creative juices together and you get tonight's dinner! I guess you could call it a roasted lemon, rosemary, garlic chicken!
I marinated the chicken in 5 ingredients (well 4+ the bird). I used EVOO, fresh lemon juice, rosemary (from my garden), and garlic. It marinated for about 3 hours.
I have a thing about raw chicken. Some part of me feels like it's weird to post raw chicken photos on the blog? Like I'm showing naked chicken...like it's taboo....it feels wrong to me. Am I crazy? Does any of this make sense? Am I taking crazy pills? (quick- what movie is that last one in?)
Into a pan went the chicken. I topped it with some extra rosemary and lemon slices. I had an extra Vidalia onion on hand so I put chunks of that in the oven too. I also took a whole clove of garlic and roasted it along side the chicken.
Mr. Roasted Garlic....if you're reading this...you were the STAR of the show tonight! You were sweet and flavorful and I don't even CARE how stinky I may be right now!

The chicken and the garlic baked for 40 minutes at 350. I covered the chicken for the first 30 minutes.
The meal was served with frozen green beans (oh yes, I'm Mrs. Fancy pants) with some silvered almonds.

I can't stress how good the roasted garlic was. The chicken was moist and full of flavor (which is a feat for plain chicken breast) but that garlic sang. La la laaaaaaaa! I encourage you to roast some up yourself and add it to chicken or smear it on some crusty bread. Just don't tell me about the bread okay! :)
I'm proud of myself for adding so much punch and flavor to a typical "clean eating" dish of baked chicken. See, clean eating isn't ALL BORING! :)
I also want to give a shout out to my friend Chris for his clean eating cooking success tonight! He made brown rice with herbed chicken and broccoli. Kudos good man!
Question of the day- is it weird to show raw chicken pics? Or am I weird?
