Purple Popeye Power

This has been a week of transition for me.  After nearly 6 months of "saying" I was going back to school and 5 online classes, this week I actually had to physically GO back to school.  Wake up early, drive, sit in a lecture, and all that jazz!

For those of you who don't know, I am getting a second degree (my first is in marketing and communications from UCF, yes u can finish).  I'm attending Keiser University in Lakeland to get a BS in Dietetics and Nutrition.  I am beyond excited to be on the path of becoming a Registered Dietitian and then I can share that wealth of knowledge with you!  (and since I'll be officially certified you can't disagree with me... ever!  jk)  Keiser is one of only 2 school in Florida that offers a coordinated program in dietetics that is accredited by the American Dietetic Association.  Meaning that when I'm done with my coursework (in the summer 2013- ouch) I can sit for my board.


What that all adds up to is that my morning routine has undergone a MAJOR shake up!


Gone are my 830 wake ups with a long enjoyed coffee, Kashi Go Lean with berries, and my Twitter feed on my IPad.  Now I get up and rush out the door- like everybody else!


My kashi has shifted to an afternoon snack since there's no am time for cereal and I'm the Smoothie Queen!


I like smoothies because they are fast and easy to make, I can drink them in the car, and I can load them with protein and nutrients to keep me full!


This week I was really on a berry smoothie kick!  Some people may be put off by it, but I actually like chewing the little berry seeds.  It makes me feel like I'm eating more...is that weird?


But why call it Popeye?  Cause there's spinach in there baby!!! 


I had seen other "healthy bloggers" suggest this and I was very excited to give it a try.  You do NOT taste the spinach and you are getting a nutrition WALLOP first thing in the am!


Quick spinach salute- 1 cup of spinach has 30 calories, 1g of protein, 56% of your daily intake of Vitamin A, 15% Vitamin C, and 5% of your daily iron needs.  Plus antioxidants, magnesium, zinc, and so much more.  1g of spinach gives you MORE iron than 1g of ground beef.  True story.


I'm strong to the finish when I eats me spinach!  (come on- you know the rest) I'm Popeye the Sailor Man! Toot toot!

Purple Popeye Power Smoothie


1 cup almond milk (or your milk o'choice)
1 scoop vanilla protein (I use one that's a protein blend of whey and casein)
1 cup frozen mixed berries 
1T flax seed
3T oatmeal
1 handful spinach
1 handful ice cubes


Blend and enjoy!
