MA.....Meatloaf!

We all know there are a thousand jokes and sitcom plot lines devoted to the dreaded "mother-in-law".  There's the crazy one, the drunk one, the passive-aggressive one, the "my son will never love you the way he loves me" one, and so on.  I'm reminded of Jane Fonda in "Monster In Law". Yikes!


Luckily for me, my mother-in-law is none of those things!  She is just as sweet, loving, and caring as her son.  And apparently she makes one heck of a meatloaf! Several weeks ago when I asked Kyle what he wanted for suppers that week he said, "Meatloaf.  But make it like my mom."  So with a little advice from my MIL Nancy and some healthy adaptations here is my recipe for Ma's  Turkey Meatloaf. The turkey bacon on top and steak seasoning make a big taste difference..kudos mamma B!

Ma's Turkey Meatloaf


1 package Jenny-O Extra Lean Ground Turkey
3/4 cup panko breadcrumbs (or whole wheat)
1/2 c. skim milk
1 medium onion peeled and diced
2 eggs beaten (you can also use just whites to be even healthier)
2 t. Worcestershire sauce
2 T. steak seasoning (I used a dry seasoning but you could use Dale's too)
1/2t. salt
1/4c ketchup + ketchup to top loaf once in pan
3 slices turkey bacon


Preheat oven to 350.  Combine breadcrumbs and milk.  Let soak for 1 minute.  Combine all ingredients except turkey bacon.  Combine until well mixed.  Transfer into a loaf pan.  Top with a generous coat of ketchup to your liking.  Place 3 strips of turkey bacon across top of the loaf covering it completely.


Bake 1 hour.  Let rest 10 minutes before serving.
